Gingered Sweet Potato Soup

6 cups cubed peeled sweet potatoes

3 1/2 cups chicken or vegetable stock

1 tbsp The Ginger People® Organic Minced Ginger

1/2 cup unsweetened coconut milk

1 tbsp fresh lime juice

1 tbsp The Ginger People® Organic Ginger Juice

1/2 tsp salt

1/4 tsp pepper

1/4 cup sliced almonds, toasted

1/4 cup chopped fresh coriander for garnish

 Instructions: In pan, combine potatoes, stock and Minced Ginger. Bring to a boil and reduce the heat, letting the ingredients simmer for 10 minutes or until potatoes are tender (time will depend on how small you cut the potatoes). Transfer the ingredients to a food processor until smooth. Return to saucepan; whisk in coconut milk, lime juice, Ginger Juice, salt and pepper. Cook over low heat until heated through. In the meantime, toast almonds until golden brown. Ladle soup into warm soup bowls. Sprinkle with toasted almonds and coriander. Serve.
