Strawberry Ginger Soup

2 1/2 cups strawberry puree (3 pints strawberries), strained + a few extra for garnishing

1 ripe banana

1 to 2 tablespoons The Ginger People Organic Ginger Juice

1 cup sparkling apple cider

4 tablespoons plain, nonfat yogurt

Instructions: Combine the strawberry and banana in a blender. Blend until smooth. Add the Ginger Juice to taste and enough sparkling cider to create desired consistency. Ladle the soup into chilled soup bowls. Serve with a dollop of yogurt, a scattering of strawberries and a mint leaf.
