Ginger Jelly Donut made with Organic Ginger Spread

Ginger Jelly Donut

Makes about 12 donuts


Ingredients

1 packet active dry yeast

1/2 cup warm water

1/4 cup sugar

1/4 tsp baking powder

1 tsp salt

2 1/2 cups all-purpose flour

1/8 cup butter, softened

3 egg yolks

1 tsp vanilla paste

Organic vegetable shortening or peanut oil, for frying

1 jar The Ginger People®Organic Ginger Spread

superfine or powdered sugar for dusting

 

Instructions

In a mixing bowl, whisk the yeast and 1 tablespoon sugar into the water. Let sit until foamy, about 5 minutes. Meanwhile, in a separate bowl, sift together dry ingredients. Add butter, egg yolks and vanilla to yeast mixture and mix on medium speed until smooth. Slowly add in dry ingredients and mix using a dough hook on your stand mixer or knead by hand until dough is smooth and elastic. Add more flour if needed. Transfer to oiled bowl, cover and let rise until doubled, 1-2 hours. Once the dough has risen, roll it out to 1/2 inch thick. Using a 2-inch biscuit cutter, cut out rounds. Transfer to a parchment-lined baking sheet to rise for another 30-45 minutes. Fill a pastry bag fitted with a large round tip with Ginger Spread. Fill a deep skillet or pot with about 2 inches of shortening or oil and heat over medium heat until it reaches 325-350F. Drop in a few donuts at a time and fry on each side about 1 minute. Remove from oil, allow to cool. Fill with Ginger Spread and dust with sugar to finish.
