8 oranges

1 bottle of The Ginger People® Organic Ginger Syrup

2 jars of The Ginger People® Organic Crystallized Ginger

10 cups organic cane sugar

3 cups water

Testing methods: candy thermometer or small plate


Place a small plate in the freezer (This is a way to test if the marmalade is done).  Quarter oranges, and then slice to make small triangle shapes.  This makes a chunky marmalade, but if you prefer yours to be smoother, chops the orange even more.  Add to a stock pot with 3 cups of water.  Bring to a boil and then simmer for 30 minutes.  While oranges are simmering, chop the crystallized ginger and add with the ginger syrup and 10 cups of sugar to the stock pot and stir to incorporate. Stir the marmalade occasionally to make sure it is not burning the bottom of the pot.  If you have a candy thermometer (The easiest way to test if the marmalade is done), cook marmalade until it reaches the "jelly stage" 220°F.  This process can take anywhere from 1-3 hours.  If you've chosen the "small plate" option, periodically take a spoonful of marmalade and place on plate in freezer.  Continue to do this until the mixture is thick.
