Ginger "Love Apple" Bruschetta


1 whole wheat baguette
6 small to medium sized Heirloom tomatoes
1 4oz wedge Pecorino cheese
1 big bunch fresh basil
1 cup sliced fennel
1/4 cup sliced red onion
1 clove garlic, chopped
1/4 cup olive oil
2/3 cup The Ginger People® Ginger Spread
1/4 cup champagne vinegar
Salt and pepper to taste


Thinly slice heirloom tomatoes and place in a shallow bowl. Drizzle champagne vinegar over tomatoes and let marinate until you are ready to assemble the bruschetta. Pesto: place fennel, basil (set enough basil aside for garnish), red onion, garlic, olive oil, and 1/3 cup ginger spread in a blender or food processor. Blend until incorporated. Add salt and pepper to taste. Transfer to a bowl. Slice baguette diagonally into 2 inch pieces, and lightly toast in the oven if desired. Using the remaining 1/3 cup of ginger spread, thinly spread onto one side of the sliced bread. Spread pesto on top of ginger spread.  Arrange layered on each slice: 1 slice of Heirloom tomato 1-2 thin slices of Pecorino cheese 1 basil leaf for garnish
