Ginger Pear Muffins

4 cups flour

4 teaspoons baking powder

1 cup sugar

1/2 teaspoon salt

2 fresh pears, cubed

3/4 cup The Ginger People® Crystallized Ginger Chips

4 eggs

3/4 cup milk

2 ounces melted butter

1/2 cup orange juice

Zest of one orange

1/2 cup firmly packed brown sugar

Instructions: Preheat oven to 375°F. Sift together first four ingredients. Whisk together eggs, milk, butter, orange juice, orange zest and brown sugar. Toss pears and ginger with dry ingredients. Fold in liquid until just combined. Sprinkle with granulated sugar. Bake in greased muffin tins for 15-18 minutes. Makes 3 dozen.
