Halibut with Ginger Lemon Grass and Apple Couscous

2/3pound halibut, cubed and skewered

1 cup couscous, uncooked (or rice if couscous in unavailable)

1/4 cup golden raisins

1 apple cored and diced

1 bunch cilantro chopped

2/3 cup The Ginger PeopleGinger Lemon Grass Dressing

Instructions: Prepare fire for the grill. Cook couscous according to box instructions. When done, add ginger lemon grass dressing, raisins, apple and cilantro to the couscous. Toss. Grill haibut skewers 3-4 minutes. Place on top of couscous, sprinkle with cilantro and serve.
