Indonesian Ginger Peanut Salad

Ingredients:

Spicy Peanut Dressing


1/3 cup natural peanut butter

1/8 cup Gin Gins® Peanut Chewy Ginger Candy, finely chopped


1/3 cup The Ginger People Organic Bare Ginger, minced 

1/3 cup rice wine vinegar


2 Tbsp soy sauce


2 Tbsp packed brown sugar


1 Tbsp Sriracha


1 large garlic clove, pressed


Salad


8 cups thinly sliced cabbage (from about 1 medium head)


1/2 pineapple, peeled, cored, and cut into strips

2 carrots, peeled and grated


1 red bell pepper, thinly sliced


4 scallions, thinly sliced


1/2 cup chopped fresh cilantro


1/2 cup chopped roasted and salted peanuts


lime wedges

 

Instructions:
Whisk together all ingredients for dressing and set aside to let the flavors meld. In a large bowl, toss together all salad ingredients. Spritz with lime juice. Pour dressing over salad just before serving.
