Sweet Pea, Miso & Ginger Spread

1/4 cup canola oil

2 scallions, thinly sliced

2 tbsp The Ginger People® Organic Minced Ginger

1 jalepeño, seeded and minced

1 lb frozen or fresh baby peas

2 tbsp yellow miso

salt and pepper to taste

Directions: In a large skillet, heat the oil.  Add scallions, ginger and jalepeño.  Cook over moderate heat, stirring until fragrant, about 1 minute.  Add peas and cook, stirring occasionally, until tender, about 3 minutes.  Transfer pea mixture to a food processor and let cool slightly.  Add miso and 1/4 cup of water.  Puree until smooth and spoon into a bowl.  Salt and pepper to taste.
