Gingered Quinoa Salad

3/4 cup dried quinoa

1 1/2 cups boiling water

1 cup chopped flat leaf parsley

sections of 1 blood orange, chopped

grated zest of 1 blood orange

grated zest of 1 lemon

1 tbsp lemon juice

2 tbsp The Ginger People® Organic Grated Ginger

1 tbsp The Ginger People® Organic Ginger Juice

1 tbsp olive oil

1 tsp kosher salt 2 tbsp toasted pine nuts

Directions: Add quinoa to a medium pot and cover with water.  Bring to a boil, cover, reduce heat to medium-low and simmer until the water is absorbed, about 15-20 minutes.  Let quinoa come to room temperature.  Meanwhile, in a large bowl, combine parsley, chopped orange, orange and lemon zests, lemon juice, scallion, grated ginger, ginger juice, olive oil, and salt.  Toss to combine.  Add the cooked quinoa to the dressing and mix well.  Toss in pine nuts.  Serve chilled or at room temperature.
