What a great way to get your ginger and apple a day.

Ingredients

2 cups carrots, peeled and sliced on the bias
1/3 cup orange juice
3 teaspoons Ginger People¨ Crystallized Ginger Chips, finely chopped
2 tablespoons butter
2 medium apples, cored and cut into
1/4 inch thick slices (4 cups)
Fresh chives, snipped finely

Ginger-Spiked Carrots and Apples

Instructions: In a covered skillet cook carrots, orange juice, and ginger in hot butter for 5 minutes. Add apples; cover and simmer for 3 minutes or until slightly tender. Top with chives. Serves 4.
