Chewy Ginger Snaps are delicious!

Ingredients:

2/3 pound swordfish, cubed and skewered
1 cup couscous, uncooked (or rice if couscous in unavailable)
¼ cup golden raisins
1 apple, cored and diced
1 bunch cilantro, chopped
2/3 cup Ginger People Ginger Lemon Grass Dressing

Ginger Swordfish, Apple & Couscous Salad*

Instructions: Prepare fire for the grill or barbecue. Cook couscous according to box instructions. When done, add Ginger Lemon Grass Dressing, raisins, apple and cilantro to couscous. Toss. Keep warm. Grill swordfish skewers 3-4 minutes. Place on top of couscous, sprinkle with cilantro and serve.
