Ginger Spiced Stuffing


3 tbsp butter

3 carrots, peeled and sliced

3 stalks of celery, sliced

1 small onion, chopped

1 tablespoon The Ginger People® Organic Grated Ginger

2 apples cored and chopped

1/2 cup dried cranberries

6 cups of stuffing mix or homemade breadcrumbs

3 cups chicken broth

 Instructions:Preheat the oven to 375F. In a frying pan, melt the butter and sauté the carrots, celery, onion and ginger for about 8-10 minutes. Combine the vegetables with the apples, cranberries and stuffing in a large bowl. Add about 2 cups of broth and mix well. Make sure that the bread is moist. Transfer the mix to a greased baking dish and cover with foil. Bake for 25-30 min. Remove cover, add enough broth to keep it moist, and bake for another 10 minutes.
