Triple Gingerbread

The Ginger People Signature Triple Gingerbread

1 2/3 cups unbleached all purpose flour

1 tsp. ground ginger

1 tsp. ground cinnamon

1 tsp. baking soda

1/2 tsp. salt

6 tbsp. The Ginger People Crystallized Baking Chips

1/2 cup (1 stick) unsalted butter, room temperature

1/2 cup packed golden brown sugar

1/2 cup sugar

2 extra large eggs

3 tbsp. minced fresh ginger

1/2 cup buttermilk

Instructions: Preheat oven to 350 F. Grease and flour 8 1/2 x 4 1/2 inch loaf pan. Sift first 5 ingredients into medium bowl. Mix in 3 tablespoons crystallized ginger. Beat the butter and both sugars in large bowl until light and fluffy. Beat in eggs 1 at a time. Mix in fresh ginger. Stir in dry ingredients alternately with buttermilk, beginning and ending with dry ingredients. Transfer to prepared pan. Sprinkle 3 tablespoons crystallized ginger over batter. Press ginger lightly into batter. Bake until tester inserted into center comes out clean, about 50 minutes. Turn out onto rack and cool completely. This is the ultimate gingerbread recipe. Made with three ginger ingredients, it is deliciously spiced and super moist. Serve each tender slice with a dollop of whipped cream.
