She's passionate about taking ginger into unexpected places, while still revisiting the classics like her beloved Ultimate Chewy Ginger Snaps. Favorite culinary book: Salt, Fat, Acid, Heat. Favorite moment with a fellow chef: Dinner with Julia Child, 1992. Actually, she was at the next table. We told the waiter, "We'll have what she's having."Baked Butternut Squash Fries
Butternut squash fries are a lighter, naturally sweet alternative to traditional fries. They bake up perfectly in the oven or air-fryer, and their mellow flavor makes a great canvas for bold, ginger-forward seasoning.
ingredients
- 1 medium butternut squash, peeled + cut into fry-sized sticks
- 2 tablespoons olive oil
- 1 teaspoon sea salt
- ½ teaspoon black pepper
directions
- Preheat oven to 425°F (220°C).
- Toss squash sticks in olive oil, salt, and pepper.
- Spread evenly on a parchment-lined baking sheet (don’t overcrowd!).
- Bake for 25–30 minutes, flipping halfway, until golden and crisp at edges.
Flavor Twist #1: Sweet & Spicy
A sweet-heat combo that transforms simple squash fries into something snack-worthy. Cinnamon and cayenne add warmth and kick, while finely chopped crystallized ginger chips bring bright pops of sweet spice—like a lighter, more playful take on sweet-and-spicy kettle chips.
ingredients
- 1 tablespoon The Ginger People® Crystallized Ginger Chips, chopped finely
- ½ teaspoon ground cinnamon
- ⅛ teaspoon cayenne pepper (adjust to heat preference)
- Pinch of flaky sea salt
directions
- Combine Crystallized Ginger Chips, cinnamon, cayenne and sea salt in a small bowl.
- Sprinkle over hot baked fries and toss lightly.
- Serve immediately for a sweet-spicy kick.
Flavor Twist #2: Sweet & Sticky
This creamy dipping sauce balances tangy lime, mellow yogurt and the aromatic lift of ginger juice. Light, zippy and slightly sweet, it complements the caramelized squash perfectly and turns a simple tray of fries into a seriously moreish side.
ingredients
- ½ cup Greek yogurt (or plant-based yogurt)
- 1 tablespoon The Ginger People® Ginger Juice
- 1 teaspoon honey or maple syrup
- Zest + juice of ½ lime
- Pinch of sea salt
directions
- Stir all ingredients together in a small bowl until smooth.
- Adjust sweetness or tang to taste.
- Serve as a dipping sauce with baked fries.
